I am wondering if I just didn't keep it warm enough by the time I poured it on - I used lukewarm water but maybe next time I'll use hotter water. I was thinking also that maybe I could try mixing everything in the pot I used to warm the cream instead of the (probably cold) glass mixing bowl I used this time around. That would probably keep everything nice and warm. Do you think that would work okay? Chocola...Gwen - what kind of chocolate did you use? Chocolate chips don't melt well and often times will be grainy. A nice bar of Ghirardelli chocolate works really well. Also, if the water was cold that may have caused the chocolate to seize up.
